And food writer and scholar Robert Moss talks about his new book The Lost Southern Chefs: A History of Commercial Dining in the Nineteenth-Century South which explores the hidden history of chefs, restaurateurs, and caterers — Black and white, male and female — who created a thriving and sophisticated food culture that helped shape Southern cuisine and fine dining as we know it today.
